  • 2 cups cooked chicken shredded (rotisserie, leftover, or canned)
  • 1 can (10.5 oz) condensed cream of chicken soup or cream of mushroom
  • 1 cup sour cream or plain Greek yogurt
  • 2 green onions sliced (or 1/3 cup chopped onion)
  • 1 sleeve Ritz crackers about 32 crackers, crushed
  • 4 tbsp butter melted

  • 1 cup shredded cheddar cheese
  • 0.5 tsp garlic powder
  • 0.5 tsp onion powder
  • pinch black pepper or paprika for garnish

Method
 

  1. Preheat oven to 350°F (175°C). Lightly grease a 9x13-inch baking dish.
  2. In a large bowl, mix together condensed soup, sour cream, and green onions. Add optional seasonings if using.
  3. Fold in shredded chicken until well coated. Add optional cheese if desired.
  4. Spread mixture evenly in prepared baking dish.
  5. In a separate bowl, combine crushed crackers with melted butter until evenly coated.
  6. Sprinkle buttery cracker crumbs evenly over casserole.
  7. Bake for 25-30 minutes until edges are bubbling and topping is golden brown.
  8. Let stand 5-10 minutes before serving to allow casserole to set.

Notes

Make-Ahead: Assemble up to 24 hours in advance and refrigerate before baking. Add 5 minutes cook time if cold.
Freezing: Prepare without baking, wrap tightly, and freeze for up to 3 months. Thaw overnight before baking.
Serving Suggestions: Pair with mashed potatoes, steamed vegetables, or a fresh salad.
